Oolong tea is a collective name for a partially oxidized tea. Fujian, Guangdong and Taiwan are the areas of origin of Oolong tea.
It could be divided into 3 categories according to its degree of oxidation: light, medium and strong. The medium and strong oxidized Oolong teas are often roasted. Roasting gives a caramelized character with a smell and taste of ripe fruit. While the lightly oxidized Oolong has a milder character and a refreshing floral aroma.
Oxidation and roasting produce an incredible spectrum of tastes and characteristics and endless possibilities. It is a fascinating world.
